This sweet, tangy and fresh sparkling plum soda will quench your thirst on any summer evening. A refreshing drink before dinner or during, this is a great alternative to an alcoholic cocktail and is packed full of flavour.
4 ripe plums (sliced into small chunks)
Half a lime (juiced)
Few mint leaves
50ml of purified water
200ml Sparkling water (200ml will serve one drink)
For serving;
Ice cubes (2-3 per glass)
Mint leaves (1 per glass)
Ingredients.
Add your plums, lime juice, mint leaves and water to a pan. Simmer on a low for around 10 minutes or plums begin to melt and liquid thickens to a syrup constancy.
Allow liquid to cool and then blend into a smooth syrup.
In a glass place ice cubs, two tablespoons of syrup, 200ml of sparkling water and mix well.
Garnish with a slice of mint.
The syrup will store in the fridge for 3-4 days.
